Jimmy Red spent the first ten years of his hospitality career in Minnesota's capital city of St. Paul at Patrick McGovern’s on West 7th,. He started there in 1999, the inaugural year the Minnesota Wild dropped the puck. He then moved to another St. Paul institution, Tavern on Grand, where he served a ton of their famous walleye and equal amounts of good times!
The Birchwood Cafe offered him an opportunity he couldn't refuse, so he crossed the river for a chance join Tracy Singleton’s progressive and farmer driven cafe in the Seward neighborhood of Minneapolis. He was the General Manager there for over ten years and helped grow Birchwood into an iconic, hyper local restaurant, catering company and in 2018, a Minnesota State Fair vendor. He is passionate about people, real food, and genuine hospitality with heart.
